What the inspector found
- Improper hot holding: Hot dogs in hot holding in the steam table temped 130-132°. PIC stated that they had been reheated to 165° on the roller and then moved to the steam table for hot holding. PIC chose to voluntarily discard the hot dogs an.
- Improper cold holding: Cold brew (containing milk) in cold holding in the front drink dispenser temped 52°. PIC stated it had been in the dispenser overnight. Cold brew embargoed, approximately 4 pounds. PIC will discontinue use of the drink d.
- Toxic substances storage: Numerous bottles of chemicals were stored beside clean towels and over single use towels on the back storage shelf. Two chemical spray bottles were stored with the nozzles over single use cups on a shelf under the front.
