What the inspector found

• Variance Obtained For Specialized Processing Methods (critical): A variance was not obtained from the regulatory authority for a specialized process when required. [reduced oxygen packaged (ROP) temperature controlled for safety foods being held longer than 48 hours; packages dated but not time stamped; blanket quarantine issued for any reduced oxygen packaged foods without date or dated 3/31 or before; order issued to remove from package any ROP foods dated 4/1 or 4/2]
• Insects, Rodents And Animals Not Present (critical): Presence of insects. (cockroaches seen in kitchen; a couple near steamer on cook line; several seen in hole in the wall by roll top cooler on cook line)
• Proper Cold Holding Temperatures (critical): TCS food not maintained at 5°C (41°F) or below. (deli meats and cut tomatoes being double panned in roll top coolers holding between 48F-52F; food had not been there longer than 2 hours, food was removed from the double pan and temperature was decreasing; lower portions of the roll top coolers were holding at or below 41F)
