• Proper Date Marking and Disposition: 3-501.17 - Priority Foundation: Ready-To-Eat Time/Temperature Control for Safety Food, Date Marking. Addl Notes: Observed several containers of prepared and ready to eat food in the walk-in cooler without proper date markings.
• Wiping Cloths; Properly Used and Stored: 3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: Observed sanitation bucket under salad prep line without adequate sanitizer. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Actio
• Physical Facilities Installed, Maintained, and Clean: 6-501.114 - Core: Maintaining Premises, Unnecessary Items and Litter Addl Notes: Observed several pieces of equipment and clutter in back storage areas that aren't in use. Remove all unnecessary equipment not intended for use in restaurant operations. Corrective Action: Correct prior to next routine inspection.
• Adequate Ventilation and Lighting; Designated Areas Used: 6-303.11 - Core: Intensity-Lighting Addl Notes: Observed burned out light bulb in walk in cooler. Replace burned out light bulb. Corrective Action: Correct prior to next routine inspection.
