• Approved Thawing Methods Used: 3-501.13 - Core: Thawing Addl Notes: Observed frozen shrimp thawing in stagnant water at sink. Predefined Comment: All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.
• Non-Food-Contact Surfaces Clean: 4-602.13 - Core: Nonfood Contact Surfaces Addl Notes: Observed oil/grease drops on ceiling next to exhaust hood. Predefined Comment: Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
