What the inspector found
- Inspectors recorded 14 violations, including two instances of bare-hand contact with ready-to-eat food, raw seafood stored over ready-to-eat seafood, and cured eggs and tanni yogurt past their hold dates — embargoed.
- Product from an unauthorized sous vide octopus process and a room-temperature fermentation process were also embargoed.
- Additional violations included Bearnaise sauce held at 107°F, cooked items out of temperature on the counter, and utensils stored in 122°F stagnant water.
