• Cold foods not at 41 degrees or less. Educated as corrective action
• Cut and cooled product not covered in walk-ins. Raw proteins stored next to/over ready-to eat foods and sauces
• Scoops stored handles touching product in bulk containers
• Equipment stacked wet nesting
• Food and non-food contact equipment damaged throughout
• Build-up on equipment, shelving, outside of ovens, fryers, etc. Grease, grime and build-up on doors, door handles, etc
• Floors, walls, ceilings--build-up. Attached equipment, under fryers/wok station--build-up
