What the inspector found
- Improper handwashing: Did not observe any hand washing during inspection. Observed employees handle personal beverages, pick up plastic off of the floor, and adjust shirt and resume handling food. Provided education regarding proper hand wash.
- Raw food stored above ready-to-eat: Carton of raw shelled eggs stored above house made sauces, cooked broccoli, and bulk condiments. COS by moving raw eggs to lower shelf.
- Improper hot holding: Cooked hamburger and cooked shrimp stored in uncovered steam table temped 130°F and 119°F, respectively. Food had been held hot for 50min. COS by reheating to 165°F. Instructed PIC to adjust temperature of steam table an.
