• Hands Clean And Properly Washed (critical): Hands not washed to prevent contamination from previous task. Employee drinking.
• Food-Contact Surfaces: Cleaned And Sanitized (critical): Employee using dirty water to sanitize food-contact surfaces (raw chicken prep area). Corrected. Employee did not rinse dishes during the wash rinse and sanitize process. Sanitizer water not clean and at no concentration. Corrected.
