What the inspector found

• 6-1A: .04(6)(f)Cream cheese stored in the display cooler was holding at 46-47°F The employee measured the ambient air temperature of the unit at 5:30 a.m. at 40°F. Upon inspection at 10:50 a.m., the products were found holding above 41°F. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: The foods were discarded.
• 13A: .02(1)(d)The facility is currently scored at 90, but a score of 100 is posted for public display. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. (C)
• 16A: .06(1)(g),(h)The facility utilizes two tankless water heaters as the hot water supply. Flow aerators have been removed from warewashing sink, preparatin sink, and service sink which are required to meet the demand. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. (Pf)
