What the inspector found

• 4-2B: .05(7)(a)1Observed that the ice machine in the back has a black mold like substance in the upper compartment where the ice is made.
• 4-2B: .05(6)(n)Observed that the in-use sanitizer buckets on the food line were below the minimum concentration for Quat sanitizer.
• 6-1A: .04(6)(f)Observed three packages of American cheese, two packages of ham slices, one container of cream, and one container of cream coffee that were being higher than 41° F for more than four hours.
• 6-1C: .04(6)(d)Observed 3 full containers of cut tomatoes that did not reach 41 degrees within four hours of preparation.
• 11A: .04(6)(e)Observed tomatoes that were cooling that were stacked and completely sealed not allowing any air movement for proper cooling. Also observed prepped lettuce containers that were cooling that were sealed and stacked.
• 12B: .03(5)(j)Observed the employee working on the food prep line did not have a beard restraint.
• 15B: .05(3)(h),(i)Observed that the facility does not have a temperature measuring device for the dishwasher.
