• Proper Cold Holding Temperatures: PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Addl Notes: Observed salad mix in reach-in cooler with an internal temperature of 60*f. PIC stated salad mix was mixed
• Approved Thawing Methods Used: 3-501.13 - Core: Thawing Addl Notes: Observed raw tuna thawing in Reduced Oxygen Packaging in reach-in cooler. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. C
• Insects, Rodents and Animals not Present: 6-501.112 - Core: Removing Dead or Trapped Birds, Insects, Rodents and other Pests Addl Notes: Observed dead German cockroaches throughout establishment. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. PIC removed pests at time of inspection.
