- Proper Hot Holding Temperatures: PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Addl Notes: Precooked hot dogs observed with an internal temperature range of 67-83*F while held at room temperature near grill
- Insects, Rodents and Animals not Present: 6-202.15 - Core: Outer Openings, Protected Addl Notes: Small gap/opening underneath the rear entrance doorway. Outer openings of a food establishment shall be protected against the entry of insects and rodents. Advised PIC to install a door seal strip underneath prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
