- Proper Cold Holding Temperatures: Observed several items (shredded cheese, pico de gallo, guacamole with tomatoes, shredded lettuce, shredded cabbage, sour cream, diced tomatoes, etc) in top compartment of cold holding units near drive thru and register with an internal temperature of 45-50*F. Person in charge stated foods were last recorded at 41*F and below within 3 hours of inspection and place
- Proper Cooling Methods Used; Adequate Equipment for Temperature Control: Both cold holding units (near drive thru and register sides) with an ambient temperature ranging 53 (top compartment)-40*F (bottom compartment). Refrigerators should be held at a temperature of 41*F to hold temperature-controlled foods. Employee mentioned they put in a service request and will be serviced today. Re-Inspection
