What the inspector found

• Proper Eating, Tasting, Drinking, or Tobacco Use: 2-401.11 - Core: Eating, Drinking, or Using Tobacco Addl Notes: Observed several opened screw topped personal drinks in the kitchen area in a bin. All personal drinks are required to be covered and have a lid a straw to minimize potential hand to mouth contamination.
• Hands Clean and Properly Washed: PRIORITY VIOLATION-2-301.12 - Priority: Cleaning Procedure. ||Addl Notes: Observed an employee washing her hands without soap in the middle basin of the three compartment sink. This sink should only be used for warewashing of food contact surfaces. The employee was instructed to re-wash her hands with soap and paper towels a the handwashing sink in the kitchen area
• Wiping Cloths; Properly Used and Stored: 3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: Observed the chlorine bleach sanitizer for the wiping cloth bucket in the kitchen area measuring a concentration of 25 ppm. It should be maintained at 50 - 100 ppm. Instructed the operator to change out the bucket and reformulate the sanitizer to be at the proper concentration at the time of inspect
