- Proper Cold Holding Temperatures: Observed two raw chicken containers, and three corn cheese containers in small refrigerator unit nearest to grill and fryer all measuring at an internal temperature of 48-51°F. All items were placed inside refrigerator unit around 1 hour before inspection. Discussed with PIC that all TCS food items need to be properly held at 41°F. PIC took All TCS foods improperl
