- Food-Contact Surfaces: Cleaned and Sanitized: PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Addl Notes: Observed dishwashing machine being utilized
- Food and Non-Food-Contact Surfaces Cleanable, Properly Designed, Constructed and Used: 4-402.11 - Core: Fixed Equipment, Spacing or Sealing-Installation Addl Notes: Observed main prep refrigerator on the main cook line with damaged door seal and misaligning door. Repair door seal and ensure door closes properly. Also observed flex pipe being utilized on the handwashing sink next to the prep sink.
