• Proper Cold Holding Temperatures: PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Addl Notes: Observed corned beef in cooling drawer at grill line at 44-45*F. Cold hold of food to be at 41*F or lower.
• Contamination Prevented during Food Preparation, Storage and Display: 3-305.11 - Core: Food Storage - Preventing Contamination from the Premises Addl Notes: Observed items such as tortilla strips and pies and pie slices stored uncovered. Food items must be covered during storage. Corrective Action: Correct prior to next routine inspection.
• In-Use Utensils; Properly Stored: 3-304.12 - Core: In-Use Utensils, Between-Use Storage Addl Notes: Observed Ice scoops stored directly on top of ice machine in kitchen Predefined Comment: In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F.
