What the inspector found
- Proper Cold Holding Temperatures: Observed numerous salsas in small refrigerator unit near soda machine measuring at an internal temperature of 44-48°F. Discussed with PIC when salsas were placed in the unit which was around hour ago. Discussed with PIC to take All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspect
