What the inspector found

• Food-Contact Surfaces: Cleaned and Sanitized: PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Addl Notes: Chlorine sanitizer in dish machine at 0ppm.
• Time as a Public Health Control: Procedures and Records: 3-501.19 (A1, B2, C2-3) - Priority Foundation: Time as a Public Health Control; Documentation. Addl Notes: Buffalo sauce (in which cooked chicken is added to) with no set discard time in the make line area.
• In-Use Utensils; Properly Stored: 3-304.12 - Core: In-Use Utensils, Between-Use Storage Addl Notes: Knife stored between the make line and prep table between uses. Ensure that in use food/ice-dispensing utensils are properly stored between uses to reduce potential contamination. Corrective Action: Correct prior to next routine inspection.
• Food and Non-Food-Contact Surfaces Cleanable, Properly Designed, Constructed and Used: 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Addl Notes: Excess ice buildup in freezer under the fan area. PIC stated that the unit would be scheduled for maintenance/repair. Ensure that the equipment is maintained in good repair. Corrective Action: Correct prior to next routine inspection.
