What the inspector found

• 5-202.14 Install a backflow prevention device that meets A.S.S.E. standards. // Vacuum breaker installed at the mop sink is leaking water.
• 5-205.11 Cease using hand sinks for any purpose other than handwashing. // Dirty dishes stored in handwashing sink across from 3 compartment sink.
• 3-501.16 (A)(2) Maintain TCS food at 41 F or below. // TCS foods stored in two make tables by cooktop and pizza oven are out of temperature. One make table has an ambient thermometer reading 50F and the other is reading 52F. All TCS foods inside these tables are reading 49-52F. -COS, all TCS foods that had been sitting in the make tables since the day before PIC voluntarily discarded. All TCS foods that had been moved out of the WI cooler to the make table coolers at 11 am when the establishment opened has been moved back into the WI cooler.
• 4-302.14 Provide an appropriate chemical test kit that accurately measures the concentration of sanitizing solutions. // Establishment is using chlorine in the dishwasher in the kitchen and the bar dishwasher but does not have any chlorine test strips.
