What the inspector found

• 3-302.12 Label all food or ingredients that are not in the original package with the common name of the food. // Food items throughout the establishment not in the original packages are not being labeled.
• 4-901.11 Allow utensils to air dry before stacking. // Clean dishes stored on the racks behind the dishwashing area are being wet stacked.
• 6-501.114 Maintain premises free of items that are unnecessary to the operation or maintenance of the establishment, such as equipment that is nonfunctional or no longer used. // Many pieces of old equipment no longer in use are being stored outside.
• 6-303.11(C) Provide at least 50 foot candles of light in food prep and ware washing areas where employee safety is a factor. // All hood lights are out in the hood next to the mop sink, half of the hood lights are out in the hood next to serving window.
• 7-102.11 Label all toxic items not in original containers with the common name of the product (Pf). // Several chemical bottles throughout the establishment are not labeled.
• 5-205.15(B) Maintain plumbing in good repair. (ex: floor drain covers, missing toilet tank lid, broken toilet seat, etc.) // Cold water knob at handwashing sink at the entrance to the kitchen is not flowing properly and leaking. 5-205.15(B) Repair condensate leak in refrigeration units. // WI freezer is leaking condensate.
• 3-603.11 Inform consumers by way of a disclosure and reminder by denoting with an asterisk on the menu that raw or undercooked animal foods may increase the risk of foodborne illness. // Old menu has asterisk and reminder, but is missing the disclosure.
